I'm a big fan of oatmeal cookies and white chocolate, and cinnamon, and toffee, and well basically everything in this cookie, and its pretty good and has a very wintery feeling.
Ingredients:
1 cup of butter
1 cup of sugar
1/2 cup of brown sugar
2 eggs
1 tsp of vanilla
2 cups (260g) of flour
1tbsp cornstarch
1 tbsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cup oats
1/2 toffee bits
1/2 white chocolate chips
1/2 graham cracker bits
Directions:
1. Mix 2 sticks of soft butter, 1 cup of sugar, and a half cup of brown sugar in a bowl and mix until combined and semi fluffy. Add 2 eggs, one at a time, and then 1 tsp of vanilla and mix until smooth.
2. Combine 2 cups or 260g of flour, 1 tbsp cornstarch, 1 tbsp (or 3 tsp if your tablespoon also doesn't fit into your shaker of cinnamon), 1/2 tsp baking soda, 1/2 tsp baking powder, and 1/2 salt.
3. In batches, slowly add the dry ingredients to the butter sugar mixture and when smooth, add 1 1/2 cups of oats, 1/2 cup toffee bits, 1/2 cup white chocolate, and 1/2 graham crackers.3. Roll in to balls and put on a greased and lined baking sheet and put in a 350F or 176C oven for 8-10 minutes, or until it just starts to brown. They will firm when cooling.
