Homemade Mayo
Homemade mayo is a very easy to make and super creamy and delicious. To make all you need is an immersion blender (also known as a stick blender), and they are cheap. Depending on your palet, you might like it more tangy, or creamy or different combinations, so I am going to give you different combinations for you to enjoy!
The directions are the same regardless:
1. Put the bottom of the blender at the bottom of the cup, and over the yolk, and submerged in the oil and vinegar.
2. Press the button on the high about every 1-2 seconds, until the bottom has the new emulsified color.
3. Slowly lift the blender about an inch up and down, and then eventually spin and lift it to the top.
4. Use the blender to mix it around until it is smooth.
Measurements:
1 cup oil, 1 egg, 1 tbs vinegar.
Adjustments:
a. Adding 1tsp of lemon juice gives it some good acidity.
b. Different kinds of vinegar gives it different flavors (rice wine vinegar makes it more acidic than white vinegar).
c. White vinegar makes it white a white color, and apple cider vinegar makes it an amber color.
d. Adding an extra egg yolk makes it extra rich.
e. Different kinds of oil are acceptable, but canola and vegetable oil works the best, but you can make it 50/50 with olive oil for a different flavor.
Combinations:
a. Adding a clove of garlic and black pepper to the mix can make it better.
b. You can add more cloves of garlic, and some parsley; this goes well with meat.
c. Adding sriracha makes a great sriracha mayo.
d. Adding some dijon mustard, and horse radish; this goes great with salmon.
