Chilli


This is a homemade chilli includes making a flavor packed, homemade spice paste. It is easy to make, and if there is one thing to take away from this recipe, it is that making your own spice paste bumps this very easy recipe to another level.


Chilli Directions:


1. While they are steeping trim 3lbs of stew meat and chop up into bit sized pieces (I like chunks of meat in the chilli,but if you want to use ground beef, it'll work). Put in a pot (stainless steel if you want fond [the golden meaty bits that stay on the bottom]) and brown until cooked (stew meat is cheap because it is not very tender, so you need to cook it for longer than you think).


2. Add 1 large diced Spanish (white or yellow will work) onion (or 2 small ones), 2 jalapenos that have been de-seeded and diced, and for medium sized cloves of crushed garlic (if you want it extra spicy, add 1/2 of a diced habanero at this step). When they are all fragrant and starting to soften, add 12oz of Mexican beer (something generic like Miller Lite will work fine too) and scrape up any fond stuck to the bottom of the pot.


3. Add 6 roma tomatoes (8 small ones) cored and diced, and a 15oz can of red kidney beans (rinse them in a colander first) and add your homemade spice paste. Add 32oz of chicken stock to the pot and let simmer for a couple hours, or until the meat and vegetables are soft enough to eat. Place in a bowl with your desired cheese and/or sour cream and enjoy!






Spice Paste Directions:


1. remove the seeds and stems and chop up 4oz of ancho chilies and 2oz of Guadalajara chilles into medium size pieces and then toast them in a dry pan until fragrant, and then a little more. Before they burn (I don't know if they actually can) add 1 1/2 cups of chicken stock and then cover and let steep for 30 mins (do the meat and vegetables while you wait).


2. In a food processor, or high powered blender, add the chillies almost to the top and add some of the liquid so that it doesn't spill out. Blend until you can fit more chillies and liquid in and then blend some more until it is smooth.


3. Then add 1tb each of cumin, cocoa powder, and oregano. Pulse and then add 3tbs of cornmeal and continue to blend until smooth.
